About This Wine:
This cuvée of predominately Cabernet Franc and Merlot originates from the unique, limestone-rich clay soils found along the gently sloping benchlands of the Niagara Escarpment. Barrel aged for 15 months, it retains the distinctive mint-berry character typical of these varieties in the particular area of the Niagara Peninsula. 
 
Origin:
82% Beamsville Bench (Cave Spring Vineyard); 18% Niagara River 
 
Soil:
Calcareous clay and clay loam till over shale and sandstone; gravelly loam and clay till over red shale. 
 
Composition:
48% Cabernet Franc; 29% Merlot; 13% Cabernet Sauvignon; 6% Syrah; 4% Gamay 
 
Harvest Data:
Harvest Date- Oct. 29 and 30
Sugar- 21 Brix
Yield- 3.5 tonnes/acre (61 hl/ha) 
 
Vinification:
14 day maceration followed by gentle pressing and ageing for 16 months in 25% new and 75% older oak barrels.

Tasting Notes:
Aromas of cassis, graphite, cedar and tobacco leaf, with hints of plum and smoky oak; medium in body with sweet black cherry up front, the mid-palate is quite juicy with firm yet supple seam of tannins and hints of mineral complexity; the tannins persist on the finish, closing the palate with a dry, firm feel and lots of ripe cherry fruit and barrel spice 01/10).

Pasta with ragoût; Coq au Vin; roast quail, Guinea hen roasts or duck; sautéd sweetbreads; veal or beef stews. 
 
Ageability:
Quite drinkable on release, this cooler vintage will be at its best between 2010 and 2012.
