About This Wine:
This wine originates from the limestone-rich soils of our Cave Spring Vineyard, located on a terrace of the Niagara Escarpment overlooking Lake Ontario, known as the Beamsville Bench.

Vinification:
Following a 14-day maceration in tank, 35% of the ‘free-run’ wine was bled, un-pressed, into barriques, where it finished fermenting. The remainder finished fermentation in tank, was gently pressed and transferred into barrel. A regime of 45% French, 35% Hungarian and 20% American oak was employed, with the wine ageing for 13 months in barrel. Overall, 45% of the oak was new.

Tasting Notes:
Deep, inky purple in colour, this wine is rich with aromas of black currant, plum and cinnamon layered over notes of tar, eucalyptus and cedar. The palate is full and weighty, with ripe black cherry fruit and soft barrel textures up front, giving way to sweet yet chewy tannins, dark berry fruit and an elegant, graphite-mineral quality. The tannins persist with great length on the finish, tapering down smoothly alongside notes of cigar box and spice.

Roast game birds or fowl; braised sweetbreads, rabbit, or veal shank; pan-seared calf’s liver; grilled steak
Ageability:
This superb vintage possesses the ripeness, structure and finesse to offer both drinkability on release and remarkable cellaring potential. Expect it to gain in complexity through at least 2015. Decanting is recommended.
