About This Wine:
This wine originates predominately from the lime-stone-rich clays of the Niagara Escarpment. These gently sloping terraces are moderated year round by on-shore breezes from nearby Lake Ontario. Vinified in stainless steel, our Chardonnay captures the freshness and minerality unique to this noble grape in these areas.  
 
Origin:
54% Beamsville Bench; 31% Twenty Mile Bench; 11% Niagara River; 4% Creek Shores 
 
Soil:
Escarpment Benchlands- limestone-rich clay till over sandstone and shale; Niagara River- gravelly clay loam till over red shale; Creek Shores- clay till over red shale 
 
Composition:
75% Chardonnay, 14% Chardonnay Musqué, 11% Auxerrois

Harvest Date- Sept. 5 - Oct. 11
Sugar- 21.3 Brix
Titratable Acidity- 5.9 g/L
pH- 3.38
Yield- 4 tonnes/acres (69hl/ha) 
 
Vinification:
Fermented 95% in stainless steel at cool temperatures and 5% in older barriques at cellar temperatures, with the latter portion further aged in barrel for 6 months; malolactic fermentation was inhibited

Tasting Notes:
The nose shows ripe red apple fruit with cinnamon spice and hints of fennel seed, orange zest and flint; the wine is mid-weight with a crisp, dry and stony attack and a nicely rounded middle dominated by apple fruit and mineral textures; the finish is quite supple, even oily, with pink grapefruit and fennel at the fore (1/09)

Serving Suggestions:
Grilled salmon; pan-fried shellfish; roasted chicken; stuffed Cornish hen; grilled or smoked pork; cheese casseroles. 
 
Ageability:
Best enjoyed between 2010 and 2011, this very balanced vintage will continue to develop until at least 2012
