About This Wine:
Our estate is nestled on a sheltered terrace of the Niagara Escarpment overlooking Lake Ontario, known as the Beamsville Bench. Its limestone-rich soils, gentle slope and exposure to moderated lake breezes combine to create wines of great structure and elegance. Produced from CSV’s oldest, lowest-yielding vines, this wine give full expression to the terroir of our site.
Origin:
Two blocks of vines ranging 29 to 33 years in age, in particularly gravelly soil at Cave Spring Vineyard.
Soil:
Stony, limestone-rich clay till overlying shale and sandstone.

100% Chardonnay

Vinification:
Barrel fermented in French oak, 60% of which was new, followed by 10 months of barrel ageing sur lie.

Tasting Notes:
The nose is quite nutty with notes of butterscotch, fresh cream and vanilla; the palate is dry and hefty, with fresh apple and cedar up front and a very crisp, tense middle with a distinctly stony austerity that firmly underpins rich crème brûlée flavours; the finish lavishes with barrel complexity, including notes of vanilla, butterscotch and toast; all in all, delicate yet demanding wine with finely interwoven flavours and an arresting clarity of fruit (11/08)

Roasted game birds with mushroom; pork tenderloin with grain mustard; roast chicken; grilled veal chops.
Ageability:
Best approached starting in 2010, this vintage possesses the structure and weight to cellar until at least 2016.
