About This Wine:
This wine originates from our Cave Spring Vineyard, located on a hillside of the Niagara Escarpment overlooking Lake Ontario known as the Beamsville Bench. Vinified in stainless steel, it highlights the thrilling combination of honeyed fruit, bracing acidity and flinty mineral character that this rare and noble grape is traditionally known for. 
 
Origin:
A single, 1 ha (2.4ac) block of 8 year old vines at Cave Spring Vineyard. 
 
Soil:
Limestone-rich clay loam till overlying shale and sandstone.  
 
Composition:
100% Chenin Blanc

Vinification:
Cool fermentation in stainless steel, arrested by sudden chilling, leaving a natural residual sweetness.

Tasting Notes:
A nose of ripe blueberry, Golden Delicious apple, white peach and papaya, with flinty complexity; the palate starts off with a kiss of sweetness and a supple feel, but is quickly restrained by dry, chalky textures and skate-blade acidity in the middle. Notes of apple and grapefruit rind punctuate what is a long, filigreed finish (7/08).

Ageability:
Tightly structured in its youth, this vintage demands a year of bottle age before it’s underlying richness emerges; high levels of extract and near perfect ripeness promise continued development until at least 2012.
