Appellation:
VQA Niagara Escarpment • This wine is named for layers of dolomitic limestone unique to the Niagara Escarpment. Through the force of erosion, these rock strata have come to enrich the soils of the Escarpment’s benchlands. Originating from selected vineyards along these slopes, this Chardonnay based sparkling wine bears the mark of its origins. The calcareous clays of these sites contribute to the mineral nuances and vibrant fruit that are its hallmark.

A single block of 26 year old vines at Cave Spring Vineyard (Beamsville Bench)

Tasting Notes:
A dry, brut-style sparkler with aromas of ripe red apple, bread dough and toasted nuts; medium bodied on the palate, it is quite round up front with a fine, delicate mousse; the mid-palate shows rich apple fruit balanced by a hint of mineral austerity, followed by a crisp yet full finish of yellow plums and light toastiness (10/09)
