About This Wine:
This wine is named for layers of dolomitic limestone unique to the Niagara Escarpment. Through the forces of erosion, these rock strata have come to enrich the soils of the Escarpment’s benchland. Originating from selected vineyards along these gentle slopes, this Pinot Noir bears the mark of its origins. The calcareous clays of these sites contribute to the delicate aromatics and silky textures th

77% Beamsville Bench (Cave Spring Vineyard); 13% Twenty Mile Bench; 10% Niagara River 
 
Soil:
Escarpment Benchlands – limestone-rich clay till over sandstone and shale; Niagara River – gravelly clay loam till over red shale

100% Pinot Noir

Yield- 3.5 tonnes/acre (61 hl/ha). 
 
Vinification:
7 day maceration followed by gentle pressing and ageing for 10 months in older, predominantly French oak.

Tasting Notes:
Very fragrant with aromas of macerating sweet cherries and tilled earth at the fore and notes of pepper,cinnamon and vanilla in behind; light to medium in body, the palate is quite soft and inviting on the attack, with appealing toffee sweetness; a core of silky, refined tannins emerge in the middle, enveloped by juicy, even jammy dark cherry fruit which, on the finish, gives way to enduring notes of truffle and barrel spice (2/10)
