About This Wine:
This Riesling wine originates exclusively from Riesling grapes grown in the limestone-rich clay soils of the Niagara Escarpment. Fermented in the bottle, it was aged ‘sur lie’ for 14 months prior to disgorging resulting in an aromatic ‘brut’ style with refreshing acidity and varietal character.

A single block of six year old vines at Cave Spring Vineyard (Beamsville Bench)

Tasting Notes:
A dry, lighter bodied brut-style sparkler with a aromas of flint, green apple, biscuit and a hint of toast; the palate shows a very fine mousse and refreshing tartness up front, ripe Gala apple flavours and light pie crust notes in the middle and a crisp, invigorating and persistent finish reminiscent of grapefruit essence (10/09)
