About This Wine:
This wine originates from the limestone-rich soils of our Cave Spring Vineyard, located on a terrace of the Niagara Escarpment overlooking Lake Ontario, known as the Beamsville Bench. Produced from the oldest, lowest-yielding vines at the estate, our CSV wines embody our highest commitment to quality and authenticity.

The nose displays a complex interplay of wet slate, Crispin apple, white peach, yellow plum and honeysuckle. Full-bodied and medium-dry, the palate is rich and generous with a cocktail of ripe fruits, followed by crisp acidity, mineral textures and pink grapefruit flavours. The finish is very long and intense, with a juicy, saline quality and stony edge. Very concentrated and multi-dimensional, yet beautifully harmonious and elegant, we consider this one of finest vintages of Riesling CSV in the last decade.
Grilled Turbot or Snapper; stuffed Sole; tempura; curried prawns; onion tart; roasted Cornish hen; sautéed veal sweetbreads; Tourtière; duck confit; fresh, creamy cow’s milk cheese (e.g., Mourbière)
Best approached beginning in 2011, this vintage is notable for its power and tight structure. It should develop until at least 2016 and hold until 2020 if not beyond.
