About This Wine:
This wine originates from Riesling grapes grown along the slopes of the Niagara Escarpment and south shore of Lake Ontario. These clusters were left to partially raisin on the vine during late autumn, with a further concentration of sugars and acids occurring when the berries were frozen solid by the onset of winter. Selectively hand-harvested and pressed at temperatures below -10ºC (14ºF), these grapes produced a sweet nectar with impeccable acid balance.

Vinification:
Naturally frozen grapes were selectively harvested during the night at temperatures of -10˚C; fermented in small stainless steel tanks at cold cellar temperatures over a 2-month period using selected yeasts strains.

Tasting Notes:
Golden in colour with a subtle but complex nose of Sultanna raisins, lemon zest, comb honey, poached pear and spiced apple. Up front, the palate shows intense dried apricot and grilled pineapple fruit with nuances of crème brûlée. Extremely luscious and even silky in texture, the middle is lifted by a lustrous strand of palate-cleansing acidity, which carries intense citrus, nectarine and mandarin flavours into a very long finish. Seamless in all aspects, this is one of our most concentrated and balanced Icewines to date.

Ageability:
The cooler vintage delivered sound fruit and high acid levels, promising an Icewine that will continue to develop in the bottle for at least until 2020.
